For Aunt Ruth, Peanut Butter Fudge

My hubby's Aunt Ruth is not feeling well and we went to visit recently, taking a yummy treat - how can peanut butter fudge NOT make a person perk up????  Since it is close to the end of the month (October), we called it a Reverse Trick or Treat.  In years past, on Halloween, the first stop for my kids was always Aunt Ruth's house.  We'd drive out to the comfy country farmhouse for what she called "a little treat".  When we arrived, each child had a giant lunch bag stuffed full of enough candy to supply them for a week. Something yummy always seemed to be in the kitchen too, and all of it was offered, along with an invitation to stay and talk.  I only learned she liked my treat last year, or I would have been making deliveries all along.  Around Christmas time, we were all at a family gathering, and she commented that she didn't know who had given her some peanut butter fudge, but it was delicious, but she was just sorry she had to share it.  I had given her the fudge and I have to admit, it was one of my best, most creamy batches I had ever made.  This one's for you Ruth.... you don't have to share ANY of the several pounds of fudge I brought over, and I will refill the box anytime!!!

Ingredients:
3 Cups Granulated Sugar
3/4 Cup ( 1 1/2 sticks) Butter
2/3 Cup Evaporated Milk
1 1/2 Cups Marshmallow Cream
1 Package ( 12 oz) Peanut Butter Chips
1/2 Teaspoon Vanilla

Prepare a 9 x 13 glass pan by coating with a thin coating of butter.  Combine sugar, butter, and milk in a heavy saucepan over medium heat until butter melts.  Bring to boil, stirring constantly until mixture comes to a full boil. Once at a rolling boil, stop stirring. Use a candy thermometer to bring to soft ball stage ( 238 degrees).  Remove from heat and allow to cool slightly.  Add marshmallow cream, peanut butter chips, and vanilla ( I always use real vanilla, not imitation vanilla extract), stirring vigorously until all blended and smooth.  Pour/spread into the buttered glass 9 x 13 pan and allow to cool.  Cut into squares and enjoy.  Makes about 3 pounds of fudge.
